It’s a quick, easy, and fun way to get that “crisp” to your food without breaking out the deep fryer. Not to mention there are TONS of healthy recipes that you can try out, too. My aunt got me one for Christmas and I have been having a blast experimenting with it. … [okay, their was the one time my brother tried to use it for a sandwich and almost set off the smoke alarm, but that’s a different story. 🙂 ]

Last month I posted a recipe on how to make Crispy Broccoli in the air fryer which is one of my all-time air fryer favorites, and, judging from the number of times it got repinned, you guys enjoyed the recipe, too. Taking my que, I’ll be sharing another recipe for a single serving Air Fryer Doughnut this week that combines all the best qualities: chocolate, peanut butter, and crisp.

What’s baked in less than ten minutes, crispy, and topped with peanut butter and chocolate? This single serving Air Fryer Doughnut fits the bill, and it’s ready to take the place of your hidden stash of Nutty Buddies, late night fried dough cravings, and chocolate and PB fix. THM S | Low Car | , Dairy Free Option | Sugar FreeTip: Because the dough tends to stick to the bottom of the air fryer, I use a thin metal spatula to slide under the doughnut once it’s been through the air fryer. Since the dough is softer than regular doughnut dough, you may also need a spatula to get place the unbaked dough into the chamber at the beginning, as well. Unfortunately many alternative flour blends turn to brick if they are used to liberally, so it’s a constant battle to find the proper balance between the correct texture/consistency and taste. Even though the dough is a bit harder to shape, the air fryer doughnut tastes amazing after it’s been baked.

Ingredients
  • 2 tablespoons almond flour
  • 11/2 teaspoon coconut flour
  • 1 tablespoon oat fiber
  • 1 tablespoon coconut oil
  • 1 teaspoon Super Sweet blend
  • 1 egg white
  • ½ teaspoon baking powder
  • 2 tablespoons water
  • Pinch of cinnamon
  • Dash of vanilla
Optional topping:
  • ½ ounce of melted chocolate such as Lily's Dark chocolate [dairy/sugar free]
  • 1 teaspoon peanut butter
Instructions
  1. Mix together all of the dough ingredients and bake in a preheated air fryer at 360F for about 7 minutes until lightly brown. Allow to cool and carefully remove from basket. [see note]
  2. Once cool, top with melted chocolate and peanut butter and chill in fridge or freezer until firm.
Notes

      You could certainly try! I’m sure that it would still be really tasty- especially if you baked it in a doughnut mold tin- it just won’t have the same crisp. 🙂
