This Cherry and Almond Overnight Oats Bowl is scrumptious! Bursting with almond flavor in thick, sweetened milk with fruit, it’s a combo you won’t want to pass over. THM E, Gluten Free, Low Fat, Sugar FreeThis week has been pretty crazy. Between sports, school, travel, Easter, and coming down with a cold, I’ve been pretty much been doing the “grab and shove” method of getting food. Not too classy, but I’m working on it. 😉

What is classy though is this scrumptious bowl of Cherry and Almond Overnight Oats! I mean, can it really get more quintessential than cherry and almond?! Not only did it make for a delicious breakfast that I could literally just grab out of the fridge and eat, it also happens to be out-of-this-world yummy. Maybe that’s just because our family really likes to eat oats. Or maybe it also has to do with the bursting almond flavor. Or the sticky sweet almond milk made thicker by the sugars released from the oats and Super Sweet blend. Or the soft and chewy texture of the diced cherries and soaked grain. I guess you’ll have to decide that one for yourself!

THM E, Gluten Free, Low Fat, Sugar FreeI received a bottle of almond extract for Christmas and have really enjoyed experimenting with it. Although I would have never expected myself to be an almond flavor fan, I was completely mistaken! There’s something unique and special about the flavor it adds to baked goods (like my favorite coconut flour muffins,) that you just can’t get from only using vanilla. Speaking of vanilla, am I the only one who usually ends up omitting it due to the skyrocketing prices? Yikes. Thankfully if you want to make these Cherry and Almond Overnight Oats on a regular basis, it’s a lot more economical.

If you find you need a little extra protein to hold you over until lunch, feel free to stir in some collagen or add a dollop of Greek yogurt on top. Although this Cherry and Almond Overnight Oats is pretty filling, for some people oatmeal is just one of those foods that seems to make you hungrier, if you know what I mean.

This Cherry and Almond Overnight Oats Bowl is scrumptious! Bursting with almond flavor in thick, sweetened milk with fruit, it’s a combo you won’t want to pass over. THM E, Gluten Free, Low Fat, Sugar Free, Dairy Free
Ingredients
  • ½ cup oats
  • ½ cup almond milk
  • ½ cup water
  • 2 dashes salt
  • 1 tablespoon Super Sweet Blend (scant)
  • ⅛ teaspoon almond extract (or to taste, depending on brand)
  • ½ teaspoon chia seeds
  • ¼ cup chopped cherries
Instructions
  1. Mix together all the ingredients in your container of choice, starting with the dry followed by the wet. Cover and chill in the fridge overnight before eating.
