Pie Filling Oatmeal

Last time I checked, all healthy recipe blogs are required to have
at least five variations on oatmeal! 😉 Just kidding. This delicious pie filling oatmeal is reminiscent of the classic pie filling and is complimented by my favorite brand of pumpkin pie spice and fresh pears. Yes, pears. I know apples are more classy, but sometimes they don’t cook all the way and leave a sour aftertaste. Pears are a little more sweet, juicy, and soft.

This recipe makes a single serving, but feel free to multiply it for the whole family. I ended up doing that after I made a single serving and my four younger siblings saw mine and decided they wanted some, too! They love to pour fresh goat milk over theirs.

I’ve included two different options for added protein in the pie filling oatmeal: Cottage cheese, or liquid egg whites. The cottage cheese, which is what I used in the picture, gives the oatmeal more texture and adds another separate element, while the egg whites (my personal favorite) will give it a more creamy and smooth texture. Both are great options, it mostly depends on your preference and what ingredients you have available, however, If you’re dairy free go with the egg whites.

Pie Filling Oatmeal
 
Serves: Single serve
Prep time: 7 mins
Cook time: 5 mins
Total time: 12 mins

This pie filling oatmeal uses one of my favorite spices and is the perfect fall breakfast!
Ingredients
  • ½ cup oats
  • 1 ½ cups water
  • 3 dashes salt
  • 2 donks stevia or sweetener of choice
  • â…› teaspoon pumpkin pie spice
  • 2 tablespoons cottage cheese or 3 tablespoons liquid egg whites*
Instructions
  1. Bring all ingredients to a boil except for the cottage cheese/egg whites for thirty seconds.
  2. Allow to cool for a minute, then quickly stir in either your egg whites or cottage cheese.
