Sometimes trying to find healthy recipes feels like a game of trading; you give up your sugar and white flour only to be inundated with blocks of cream cheese, processed dairy, and canisters of almonds that you are expected to hand-grind and eat by the spoonful. These recipes can be great healthy alternatives, however it is also important to not overdose them, either. Balance is key. Sure it may look pretty but if it tastes like a chocolate-flavored egg puff chances are you won’t be trying it again!

It’s often difficult to spare the dozen eggs, coconut milk, and expensive flours to make pure desserts on a regular basis, however this single serving Purists Lava Cake is makes for a wonderful afternoon pick-me-up that is both economical as well as decadent, fudgy, and rich.

It’s everything a dessert-lover could want, without any of the ingredients that are a little bit harder for our bodies to digest. Oh, and if you are dairy-free, this is definitely a recipe for you!

If you’re wondering how I got the heart decal on the top without using powdered sugar, I’ll let you in on a little secret: It’s oat fiber. I was a little worried that it would taste funny if I didn’t blow it off after photographing, however I didn’t taste it at all! This would be a great technique to use if you are bringing a healthy dessert to a party and want to make it look extra special with minimal effort.

Ingredients
  • 1 egg yolk
  • ½ tablespoon cocoa powder
  • ½ tablespoon super sweet
---------------------------------------
  • 2 tablespoons cocoa powder
  • Scant ½ teaspoon baking powder
  • 1 tablespoon oat fiber
  • 1 egg white
  • ½ tablespoon super sweet
  • Dash of salt
Instructions
  1. Seperate your egg, putting the white into a small mixing bowl for the cake and combining the remaining yolk with the super sweet and cocoa powder. Hold back for later.
  2. In your cake bowl, combine the egg white with all the other ingredients except for the yolk mixture, pouring the cake mix into a small ramekin or glass tupperware once it is thoroughly mixed.
  3. Spoon the yolk mixture into the center area of the cake and push it down a bit as if you were filling a doughnut. No need to overthink this step; the idea is simply to put a dollop of the rich fudgy yolk mixture into the center of your cake.
  4. Bake in an oven preheated to 375 F for about 11 minutes, being careful NOT to overbake and ruin the delicious lava effect.
  5. Enjoy warm as it is traditionally served or cold!

    Thank you for this recipe! I had to tweak it a little bit because I only had psyllium fiber (not oat fiber). I used 1 tsp of psyllium fiber and powdered swerve instead of super sweet. I also greased the ramekin with butter. Eleven minutes was perfect! This is the best version of keto lava cake I’ve tried - and believe me, I’ve tried a bunch! Thanks again!
