Sugar Free Junior Mints

Junior Mints have always been my Mom and I’s favorite candy to get at the drive-ins or movie theater. We don’t go very often, but when we do we almost always buy a box of them. This recipe for sugar free Junior Mints captures the same great chocolate and mint flavors while leaving out all the sugary additives and chemicals. They passed the Mom and Phoebe test. πŸ™‚
The inside of these candies is very dense and creamy; almost like a frosting. That was one of the things I noticed was missing the last time we bought a conventional box of junior mints- the filling was not creamy at all- it was almost like a white jelly. ew. Not so with this recipe!

Sugar Free Junior Mints

These sugar free junior mints are even better than the type from the candy box. πŸ™‚
Ingredients
  • 2 Tablespoons Pyure or ¾ teaspoon Super Sweet blend (I used Pyure)
  • 2 Tablespoons Sour Cream
  • 2 Tablespoons softened butter
  • ½ teaspoon mint extract (depends a little on what brand you use. Mine is Frontier)
  • 1 Tablespoon coconut oil, liquified
  • 1 rounded teaspoon oat fiber
  • 1 rounded teaspoon collagen
  • Sugar free chocolate chips of coice or homemade chocolate using coconut oil and cocopowder
Instructions
  1. mix together all ingredients except for the sugar free chocolate chips
  2. put the mixture into a plastic baggie or a piping bag and pipe out junior mint sized circles onto a baking sheet covered in plastic wrap. Freeze until solid!
  3. Once frozen, stick two junior mint rounds together to form a circle and coat quickly in melted chocolate chips or homemade chocolate, immediately putting them back in the freezer until the chocolate get's completely hard.
  4. Enjoy!
Notes
These are best kept in the freezer for the sake of consistency. Don't worry, they won't be brick-hard. πŸ™‚
